Description
The unique characteristics of the grapes used, as well as all the painstaking process that follows, makes the production of this wine limited, depending on the years and, consequently, this is the emblematic wine of the winery.Red wine made with Tempranillo grapes from old vines over 60 years old grown in their own vineyards located in the municipality of Samaniego, Rioja Alavesa.After a manual and selective harvest, the stemmed grape has been selected by hand, grain by grain, using selection tables by vibration and weight. Long macerations and intracellular fermentations with indigenous yeasts in oak vats. Natural remounts and final extraction by gravity. Malolactic fermentation in contact with its fine lees and aging for 24 months in new French oak barrels.

Bodegas Baigorri returns winemaking to its origins in a state-of-the-art facility that is as much a work of art as the wines it creates. Built around the winemaking process, an ele- gant glass structure emerges from the soil and welcomes the visitor with a stunning dis- play of the surrounding vineyards, emphasising that it is here where the process begins.Baigorri then dives more than 30 metres below the surface and relies on gravity to drive the fruit and must through its evolution towards world-class wine. The absence of hoppers, pumps or mechanical methods of any kind ensures that the individually select- ed grapes and the resulting wine are insulated from any potential damage. The result of this combination of careful vine management, rigorous selection and innovative architecture is a collection of well rounded, modern wines with a distinct personality.
